Of the 1,500+ types of sausages that are produced in Germany, cooked sausages, with more than 650 different varieties, are the most common. The majority are cold cuts. The varied selection ranges from classics such as fleischwurst, bierschinken, jagdwurst, bierwurst, lyoner and mortadella to deliciously crisp little bangers.
This type of sausage owes its name to its manufacturing process. Boiled sausages are produced by either boiling, baking, frying or otherwise heat-treating the sausages. Unlike raw sausages, the basic ingredients are ground, mixed with spices and stuffed into sausage casings, before being heated to improve their preservation.
